How to make Pork Barbecue (BBQ)
Barbecue in the Philippines means any skewered meat. It is a popular food both on streets and restaurants. If the barbecue is grilled instead of skewered, it is called inihaw in Tagalog and sinugba in Visayan. Following is the pork barbecue recipe. Pork can be substituted with beef or chicken.
Ingredients:
½ kilo or 1.1 lb pork shoulder
(kasim), cut into 1 x 1 x ¼-inch pieces
2 cloves minced garlic
½ cup soy sauce
½ teaspoon black peppercorns, cracked
½ cup white sugar
¾ cup creamy peanut butter
juice extract from 1 lemon or lime, or 5 pieces calamansi
½ can soda, may be 7-Up or Sprite
barbecue skewers (sticks) soaked in water
Cooking directions:
In a bowl, combine garlic, soy sauce, sugar, pepper, peanut butter, juice
extract, and soda. Mix well. The purpose of the soda is to tenderize and
add flavor to the meat. Marinate pork in
the mixture for at least 1 hour. Insert
about 4 pieces of pork per skewer. Grill
over hot charcoals. Continuously baste
with the marinade until well done. Serve
warm.
